AMARETTI OF ACQUI
They are sweet products with an handicraft working, maintained still
today after two hundred years of production. The sweet and/or bitter
almonds are worked with sugar with the white of the egg in a machine and
the remaining mounted white of egg is added. The paste is divided,
worked by hand and cooked since it assumes the classic shape of the
amaretto. Once cooled, it is envelopped like a candy in a small paper
where it maintains the fragrance and the softness. The secret of the
amaretto of Acqui, beyond the usage of
excellent ingredients, is the sage working of the pastry cookers who,
dosing with equilibrium the almonds with the sugar, create that lovely
sweet and bitter taste. The production methods of the Amaretto of
Acqui in the years has not varied,
always without using conservers.
