MOFERRATO'S GREEN GARLIC STARTER
Preparation: take a robiola cheese, still fresh and soft, that means
little seasoned. Crush in a pot some very fresh parsley (leaf and
stalk), basilicum, some yellow leaves of celery and some new garlic. Add
lemon, much oil of olive, salt and pepper to this mixed dough and knead
it while beating with the dough the robiola cheese. The beating
operation, instead of by hand, can be done with an appropriate tool.
Keep the dough into the refrigerator so that it gets harder.
