MARENGO CHICKEN
Ingredients (for six people)

kg. of chicken

glass of oil

prawns

gr. of mature tomatoes

gr. of fresh mushrooms

garlic cloves

gr. of parsley

some basilicum leaves

liter of dry white wine
flour

slices of bread
salt, pepper
Preparation: clean the chicken, chop it and put it into the flour. In an
oven with hot oil, put the chicken morsels, firstly the legs then the
remainder, salt and add pepper, then fry slowly constantly turning it
upside down. Meanwhile, peel the tomatoes, take the seeds off and chop.
When the chicken breasts are gilded, take them off the pot and keep them
hot, drain in another pot the frying oil and add the tomatoes, the
crushed garlic and the basilicum, put some white wine, put a lid on and
cook for 15 minutes at medium fire. Meanwhile clean well the mushrooms
and chop them, wash and mince very thinly the parsley.
Put
the chicken breasts into the pot, add the mushrooms, cover with a lid
and cook for other 20 minutes.
In
a pot pour the other wine, add some salt and the prawns letting them
cook for 5 minutes, then drain and keep hot.
In
the pot with the cooking oil, fry the slices of bread paying attentino
so that they do not become too dry but soft internally, drain and keep
hot. Always in the same oil, fry the eggs separately.
Squeeze the lemon juice on the chicken, add the parsley, mix well and
salt.
On
a hot plate, put the slices of bread around with an egg above each and
in the middle the chicken with the cooking background, then garnish with
the prawns and serve hot.
