FRIED SEMOLINA
Ingredients (for six people):

200 of semolina

gr. of sugar

dl. of milk

lemon
flour
grated bread
oil
of olive salt
Preparation: take a casserole and put on low fire with milk, sugar, a
piece of lemon skin and a pinch of salt. When it boils, pour the
semolina, by mixing continuously. Always mixing, cook for then minutes.
Extinguish the fire and take the lemon skin off. Cool.
When the semolina is tepid, add gradually and mix well 5 yolks of egg
and 4 albumes. Pour semolina in a square or rectangular plate that
allows to get a semolina 3 cm-thick. Leave it get cool and solid.
When the semolina is solid, cut it into rectangles of 4 cm. Beat the
remaining eggs and albumen.
Put
the pot on the fire with the oil. When it is boiling, take the
rectangles, pass beforehand in the flour, then in the mixed egg and in
the grated bread and fry on both sides. As soon as they are gilded, take
them off the pot and serve on a tray, coverei with cooking paper. Serve
hot.
