SOUP OF CHICKPEAS AND RIBS
Ingredients (for 6/8 people):

gr. of chickpeas

gr. of pork ribs
a
piece of pork skin
150
potatoes

gr. of dry mushrooms
onion
garlic
parsley
sage
tomato souce
salt and pepper
toasted bread
Preparation: at least 15 hours before, put the chickpeas into water.
Boil them for tow hours in the same water without lid. In another pot,
cook the ribs with the skin in salted water, for a quarter of an hour
after boiling.
Drain the chickpeas, cook them in other salted water (2 liters). As soon
as they get boiling, add the ribs and the skin, a spoon of tomato sauce
melted into water, the softened and minced mushrooms, the peeled entire
potatoes, some leaves of sage, a mix of onion, garlic and a spoon of
parsley.
When the potatoes are done, smash them and continue cooking them until
the the meat is tender. Garnish with slices of toasted bread on which
you’ll pour parmesan at your ease.
