BASSO MONFERRATO'S SOUP
Ingredients (for six people):

fresh beans

gr. of lard

gr of butter

small cabbage

garlic, onion, parsley, salt and pepper
Preparation: clean and wash the vegetables, then chop them. In a pot of
salted cold water, cook the beans; after 40 minutes from boiling, add
all the vegetables and keep on cooking for other 60 minuters. Meanwhile
melt the butter, add mixed a clove of garlic and the parsley. Add also
the thinly minced lard. Salt and pour pepper on when the lard is melted,
then put the fry together with the soup. After cooking, join the yolks
of the beated egges. Mix well and take the soup off the fire. Serve with
grated parmesan at your ease.
