PASTA AND BEANS AT THE CASALE POPOLO'S WAY
Ingredients (for ten people):
200
gr. of lard or smoked bacon
basilicum, parsley, sage
onion, celery
a
garlic clove
butter
3
potatoes
4
handfuls of beans
a
piece of pork skib
salt, pepper
400
gr. of fresh pasta
Preparation: mince everything. Put in a pot the butter, a spoon of oil
of olive, the mix prepared as above and fry. Add 3 liters of boiling
water, 3 potatoes, 4 handfuls of beans, salt and add not much pepper.
Add also, if you like, some slices of fresh pork skin. Cook for 3 hours,
smash the potatoes with 2 ladles of beans: some entire beans have to
remain. Boil back after joining all. Throw the fresh pasta and cook 5
minutes. The pasta should be white, without egg.
