SHEET OF THE CHILD (XMAS DAY'S DISH)
Ingredients (for six people):

glass of barbera wine

glass of cognac

glass of tomato soup

gr. of dry mushrooms

Preparation: prepare the lasagne by making a leaf with 500 gr. of flour,
3 eggs and 2 yolks and salt and mix for long until forming a smooth and
soft pasta. Knead and form lasagne of 10 cm. * 20 cm.. These big lasagne
that are a symbol of the sheet of the Child have to be thin and cut,
floured with little corn flour and get dried in a fresh and dry place.
As
concerns the juice, fry an onion with 20 gr. of butter and 2 spoons of
oil of olive. Add 2 hectograms of fresh unskinned and melted sausage.
Add also 2 or 3 laurel leaves, 2 garlic cloves, rosemary and sage.
Pour half a glass of red wine, cognac and when they are consumed, add a
glass of fresh tomato soup.
Put
into water or milk 50 gr. of dry mushrooms, wash them properly and add
them to the juice when cooking.
After 1,5 hour of sweet fire, take off the garlic, the laurel, the
tastes and put a spoon of mince parsley.
If
the juice is too dry, you can add the water of the mushrooms while
avoiding the sandy bottom.
At
the end of the cooking, you can add, at your taste, a knob of butter and
black pepper.
Adjust of salt and serve the lasagne, with the juice and the grated
parmesan above.
