MONFERRATO'S ASPARAGI
Ingredients (for 4 people):

kg. of asparagi
80
gr. of parmesan
60
gr. of butter
salt
Preparation: wash the asparagi, cut the woody white part, and take every
sand off. Tie them in the middle.
Take a pot and put the asparagi standing.
Pour water, salt and put on fire with a lid on.
When the asparagi are half cooked, put out and take them off the pot.
Take a plate and butter it. Put the asparagi along the plate, on two
rows, with the points towards the centre. Pour the grated cheese and the
butter. Bring the plate into oven (160°) and leave there until the
asparagi get dry and a bit coloured.
